"Coffee cherries with a small amount of mucilage are mixed with extra coffee husks (cascara) and placed into a sealed fermentation tank injected with carbon dioxide. The extended 50-hour fermentation and the high sugar content from the added husks stimulate more active microbial activity, resulting in a vibrant, fresh fruit character and a captivating, refreshing aroma
Situated at an altitude of 2,300 meters, Iris Estate is one of the highest coffee estates in Panama and all of Latin America.
